Salty Sticks
My take on a Spanish Gilda. I served these salty sticks as a welcome snack at a supper club and I think it is safe to say it was a hit! I think you either love or hate tinned fish, and I love the salty brineyness of it. This is a simple snack so it is important to use the best, freshest, most flavorful ingredients you can find! Simple good ingredients paired together simply is my favorite type of cooking.
Ingredients
1 jar of castlevertrano olives pitted whole
1 jar of spicey pickled beans
1 block of gruyere cheese
4oz of blue cheese
1-2 tins of olive oil-packed salted anchovies
1 lemon zest and juice
EVOO (extra virgin olive oil)
fresh cracked pepper
Method
Simply prep your contents. Strain your olives, slice your beans into similar sizes, cube your cheese into similar sizes, and separate your anchovies.
Stuff your olives with crumbles of blue cheese, you can just use your hands it’s ok to get messy
Then assemble your salty sticks. I did olive first, anchovies, beans, then cheese. Repeat until you’ve made the desired amount.
Plate as desired, drizzle with EVOO, top with lemon juice and zest, and finish with cracked pepper
Serve chilled as is or with crackers or bread
Notes
The ingredients can be interchanged and personalized to your liking. If you don’t like tinned fish, no worries, substitute it for cured meat or cornichons.
