Cucumbery Matchay Minty Mocktail

This little mocktail came to me as I was lying out by the pool one hot summer day. I love a fun bev, but I don’t love drinking alcohol, so this cucumbery matchay minty little bev was the perfect thirst quencher on that hot summer day.

Ingredients

  • 1 tbsp agave

  • 3 tbsp hot water

  • 1.5 tsp of matcha of good cocktail-grade matcha powder

  • ½ a persian cucumber roughly chopped

  • A few mint leaves

  • Juice and zest of ½ a lime

  • Lots of ice

  • Tajin to garnish the glass

  • Extra lime to garnish

Method

  • Make your matcha by thoroughly whisking the matcha powder with the hot water until foaming. Set aside or in the fridge to cool completely before using

  • Muddle the cucumber in a shaker bottle until smashed and juicy

  • Add the agave, matcha, mint, and juice of ½ a lime with ice in a shaker bottle and shake until your hands freeze off

  • Double strain and pour over fresh ice.

  • Garnish with a lime and tajin-rimmed glass

  • Enjoy :)
