Gf Brown Butter Banana Bread

Sunbum reached out and asked me if I wanted to collaborate on a fun, cozy banana recipe. Of course, I said yes!!! So, this gluten-free brown butter banana bread was born. I added coconut so it tasted like their signature flavors and scents, and I had so much fun producing this recipe and content with them. This is gluten-free but is still so moist and flavorful from the browned butter and yogurt!

Ingredients:

  • 345 grams brown over-ripe bananas 

  • 100 grams yogurt  

  • 65 grams milk  

  • 1 stick of browned salted butter (113 grams)

  • 1 egg

  • 2 tsp vanilla extract 

  • 100 grams of white granulated sugar  

  • 75 grams of packed brown sugar

  • 230 grams of gluten-free 1:1 flour ( I use Bob Mills) 

  • 35 grams of almond flour 

  • ½ tsp salt 

  • ½ tsp baking soda 

  • ½ tsp cinnamon

Method:

  • Brown butter in a pan, then set aside to cool in a separate bowl

  • Cream together the sugars and cooled butter

  • Add egg to butter and sugar and whisk until fluffy and lighter in color 

  • Add the smashed bananas, milk, yogurt, and vanilla to the wet mixture and combine fully 

  • In a separate bowl whisk together the flour, baking soda, salt, and cinnamon 

  • Combine the dry and wet and fold in to fully incorporate 

  • You can add mix-ins here (chocolate chips, nuts, seeds, whatever) but I like a pure banana bread taste

  • Pour into an oiled loaf pan, top with coconut flakes, and bake at 350F for 60-70minutes or until the stick test comes out clean

  • Serve warm with butter and enjoy :)
